Chicken Congee

Ingredients (serves 5)
1 3/4 cups rice - washed and drained
150 g skinless chicken breast - cut into 5 cm strips
3 slices ginger - shredded
2 tsp salt
pinch of white pepper
1/4 tsp sesame oil
8 cups water
chicken stock - make from chicken bones

Garnishing
2 stalks spring onions - chopped
few sprigs Chinese parsley

Method

  1. Boil chicken stock, add rice and bring to boil. Reduce heat and simmer, partially covered, for 1/2 to 2 hours until rice turns into a soft pulp.
  2. Stir in chicken strips, shredded ginger, sesame oil, salt and pepper and simmer gently for another 15 to 20 minutes.
  3. Garnish and serve.

Useful tips:
  • Chicken can be replaced with lean meat, fish or ikan bilis.
  • Peanuts can be added for extra protein and fibre.
